Professor Halbertsma valued time spent together. And this is reflected in our restaurant: Blumé. Dining at Blumé allows you to escape the hustle and bustle of everyday life. Time stands still, and you are treated to our chefs’ culinary creations. Here you can savour the taste of Groningen, where nature is a rich source of inspiration.

Every day we work to create new dishes, both classic and innovative. We are inspired by the region, by the ingredients that grow around us, and we lovingly incorporate them into our dishes. Game, fish from the North Sea, silty plants from the Groningen mudflats, and the finest vegetables and herbs from gardens in and around Groningen. We complement these local delicacies with herbs and spices from all over the world. But one thing is always guaranteed: our creations are inspired by nature and the changing seasons.

Blumé is an experience. A culinary experience that has already delighted many locals – something that has not gone unnoticed outside the city walls: the restaurant – and Blumé’s predecessor (Bistro 't Gerecht) – has been named a Michelin Experience by several experts and has received a mention in the Bib Gourmand. Blumé’s current head chef, Henrice Dijks, has also worked at several Michelin-star restaurants.
